If a car is plentiful enough, and your taste isn't too peculiar, you can generally find a car on a lot specced exactly or very near to your ideal spec when there are individual options. E.g., an F150, Mustang Gt, Corvette, etc.
911 is a little harder as there are just so many (too many?)...
C6 interior was a big jump from C5, C7 was a big jump from C6. However the C5 interior was really bad, even for the era.
I expect the C8 interior to be another step nicer, but at the end of the day it's still a Chevy. Even (especially) the nicest Cadillacs can't shake that GM cheesiness...
Yeah you can order a C8 however you want. Unlike Toyota where you have to just take what the distributor gives you. No pricing yet, but likely $58,995 or $59k plus probably $1k-$1,400 destination.
A year+ from now you should be able to order a car and get a discount too.
