The newer versions don't care as much, just clear codes before updating.
WiFi is optional I believe, only for FSC activation (adding/retrofitting functionality) and reporting.
Update process is all local to PC/Laptop.

Give the Enet cable a try, BMW ISTA should still work, some...
If they updated the ISTA/firmware, yes its going back to femto.
If they just performed the steering rack recalibration service function, no, the unlock/tune is untouched.
#3 in the diagram is the stock gasket, alot of aftermarket downpipes use this gasket.
I don't think this is the issue, shouldn't be a dramatic difference.
