20 Supra, 01 Tundra Limited, 00 4Runner
1st choice is Phantom Matte Gray. Like the way it shows off the lines (said many times over by others). This is the one I'll order when it is allowed to do so.

2nd choice is Absolute Zero White

3rd choice (flip a coin) Renaissance Red 2.0 or Nitro Yellow

I also love the Phantom Matte Gray color. The only problem is....I heard it’s hard to maintain matte colored cars, and that they’re prone to scratches.

The thing is you can't just order phantom matte gray. It
I also love the Phantom Matte Gray color. The only problem is....I heard it’s hard to maintain matte colored cars, and that they’re prone to scratches.
Correct. You have to be extremely careful even wiping the car down after washing. I also believe you can't do paint correction very easily.

It's my 3rd choice. Though depending on what color the dealer gets in, I may end up in black.

For me, black is the least appealing color on the new Supra. I'm also not a fan of black in general. It tends to hide the lines, curves, and details of a car. Not to mention it gets dirty really fast.

Is there info yet if the inside will be color matched to the body paint? (e.g. seat stitching)

Stitching won't be color matched.

Toyota will reserve "race" interior in a few years for special editions of the car. Probably similar to how the 86 was.

people can do the temp matte masking on a normal color as an alternative maybe?
