1. Depending on how big the stock direct injectors are, they will be one of the things to determine how much power you can make before upgrading your fuel system or installing a water/meth injection kit. As far as I know, port injection, like on other cars, requires a standalone ECU (expensive) and aftermarket fuel rails, lines, regulator, pump, etc. I'm pretty sure the stock BMW ECU is not capable of controlling 6 additional injectors but I'm not very familiar with BMW aftermarket solutions so I might be wrong but I really doubt it.

Methanol injection kits on the other hand work off of boost signals. You hook up a vacuum/boost line to the controller which determines when to inject the meth. You can either have one big port or multiple ports for each cylinder. The amount of meth injected is determined by the size of the jets in the ports similarly to how nitrous works. You can try to use regular injectors for the meth but that also requires a "piggyback" ECU similar to a standalone to control them.

2. In short, yes but not how you described it. The sport/comfort modes will work as factory to adjust suspension, exhaust sound and shifting behavior. Depending on how it will work out on the MKV, you will have another way to adjust power/boost level or choose different maps on the ECU. On the BRZ/86 for example, you could do that using the cruise control stick.

3. Nothing is going to ride as good as stock. Period. No matter what anyone claims. Air suspension is the best of two worlds as it can lower the car's COG for performance or increase ride height to avoid bumps and pot holes and it rides decent but it's more expensive as you said and evasive as installation requires some modification. Unless you track it seriously and want the best performance, they should be just fine. Coil overs are the best for performance as they have the most adjustability to dial it in just right but the ride quality will suffer.

4. Launch control is more or less the same as 2-step but with less timing retard (this is what causes backfire) and lower RPM. All can be adjusted by tuning the ECU.

5. Set a realistic goal for what you want the car to be and find a good shop that knows what they're doing. They will stop you from doing anything dumb :D

The doors look short from that video. Shorter than the 86's atleast. Which will be good for parking in spaces, if that's the case.
