I am an owner of Nurburg matte grey as it is sold in Oz. Have arranged for a full car ppf appointment (Suntek matte). Expecting it will look different from stock, but I am too paranoid about side scratches from opening doors as well...I took delivery of a Phantom Gray (matte) GR Supra about a week ago. Yes, this color and yellow are super rare, as the most common colors are White, Black, Red, and Silver. It took a while for the three dealers near me to even get one in so I could see the color in person. I live in the east bay area (California).
I had a MKIV in metallic gray and wanted to get the MKV in gray as well. I decided on the matte gray. Yes, it is harder to care for, but looks sooooooo good in person.

I have not gone with PPF yet. The issue is that the matte sheets are not wide enough to do the hood w/o a seam. I believe there is a gloss sheet that can cover the hood in one piece. If you are going with the matte PPF, the difference in sheen will be noticeable, as the PPF is more satin than matte. I'm waiting to hear from someone else who wrapped their hood in matte PPF.
Check the brand of ppf the detailer is using. Some of them have released larger sheets which will fit the clamshell bonnet in the last few months.
