The A90 is cramped and not that practical.
For what they are going to charge you for having a professional "install" of ceramic coating, you could do it yourself and be ahead.
If you are worried about doing it on the Supra, you could try it on your Jeep as an experiment....
I doubt the dealership is using anything other than some spray...
OptiCoat by Optimum was basically the top tier standard back in the day - the stuff I put on my Lexus in 2010 is now only able to be installed by a "professional" detailers.

most folks have a garage when they have a dedicated sports car.
As long as the car is clean/dry and you put a cover on it that won't scratch you should be ok.
I would honestly be more concerned with rodents making nest in the car as it would sit most of the winter...maybe some moth balls...
OEM Tires suck - are you planning on driving this in the rain? If so the PS4S are great. No rain? You might want to go to Sport Cups or Bridgestone RE71RS
You can probably do an intake/exhaust only with keeping your warranty. Any power this car makes comes from freeing up the catalytic...
I have the AMS Catted downpipe - expensive, but quality. I went from catless to AMS due to not being able to pass emissions in Illinois with BM3.
Its more muted than catless, but its louder than stock - the pops are loud and the power is still there. You pass emissions and don't stink of gas...
When the time comes to get my oil pump replaced, I'm taking it to an independent BMW shop.
Although, 1400 with tax isn't bad at all to replace with parts/labor.
