Very random question, but currently out of the country until international flights open up, and I can't visualize this for the life of me. Planning on taking the car to a shop a couple hours away from my house and will have new wheels shipped there, but will need to get the stock ones home. How many stock wheels/tires can you fit into passenger seat and/or trunk?

None with tyres. Without tyres, probably a wheel in the boot and passenger seat.

Put your car on jack stands and take the wheels to the shop in a bigger vehicle.

Thanks.. I'm planning on having bolt-ons, suspension, and wheels/alignment all done at the same time. Might just have to drive back the next day to pick up the stock wheels/tires in my suv

Ah gotcha. I do most of that at home. Alignment and tire swaps I go to a shop for, but the wrenching I love to do by myself. It's very rewarding working on a car knowing you did the work. From the YouTube videos I've watched, swapping springs is ridiculously easy on a Supra. Intake is generally no harder than a box of LEGO lol. If you're at all mechanically inclined, give it a shot. It's very therapeutic and a basic set of hand tools, a jack and stands is generally all you need. An impact gun makes life a lot easier though.

Added benefit: you can be reassured it's done right and not hastily put together.

I just went through this predicament this morning. All you're gonna fit in the truck is one wheel without the tire on it. You could fit on tire/wheel in the passenger seat and that's about it. I ended up using another car to transport everything.
