I would not assume that you will have access to a rental helmet at the track. even if they have spares, it might fit like shit and give you a headache.

if you have a random OBD device like OBD link or p2 gauge it might be worth checking to see if that causes any incorrect values or lag with the canchecked? That way we might be able to figure out if the behavior is due to the data stream or the signal injection?
