Which dealer quoted $2,600 for a hood? They must've been trying to screw you. Toyota's MSRP for the hood is $1,418.42, and many dealers sell it cheaper online. For example, https://toyotaparts.bochtoyotasouth.com/oem-parts/toyota-hood-53301waa01 has it listed for $929.50.

Those are Canadian cars. For example, that one Carfax link shows the car was first registered in Quebec. In Canada we didn't get any LEs, but the red interior is an option on our Premiums (with the exception of Renaissance Red).
