Yeah, I agree. I think the Alcantara adds some texture to the otherwise plain seats. I ordered the higher spec mainly so that I could option the Alcantara seats.
It's interesting to speculate but I don't think there will be many big changes, really. I also think new coloured interiors is a good guess based on previous iterations but what colours are left.. white accent perhaps?

In Australia we have access to all the interior and exterior colours in "base" and "premium" guises. Also, I believe the red badges are standard on all manual Supras in Europe.
