Depending on the time, you can catch some nice sunsets driving in the desert. The Alien Jerky place has some unique things in the parking lot. I personally would try to get a shot in front of the Luxor or Aria hotels.

Make a left at Baker and follow it through to Shoshone, then Pahrump. You can take 160 from Pahrump to Las Vegas. Lots of places to stop and take pics along the way.

You can try Seven Magic Mountains. It's right off the I-15 and easy to spot. Also, the whole Rock Area is a good. You can get the mountains in the background. Lastly, I would recommend a drive up Mt. Charleston; there are a lot viewing areas where you can park your car and take pictures. I see exotics go up there and take pictures all the time.
