My guess is wiring. I know you said you checked it, but this could easily be explained by a dodgy/intermittent ground or a piggyback harness that isn't quite secured.
You could also order a replacement Continental-brand ethanol sensor and try that. Send it back if it's not the issue.

I have a 2020, early enough that it did not need a bench unlock. I originally tuned with BM3. Since that time, I simply overwrote BM3 with Ecutek, and overwrote Ecutek with MHD+.
Once the car was unlocked and had a tune, I never flashed back to stock and I never had to re-unlock the ECU.

Any car is going to run rich instantly coming off 4K+ RPM to nothing. There's going to be overrun. It's going to pop, crackle, bang, whatever. Feel free to spend the next hour of your life pointlessly nitpicking the definition of "loud backfire." ✌️
This happens on any sufficiently high-performance vehicle letting off of high RPM. If it happened before you let off, that might be a sign of the tune's fuel mix being a little lean (consult with your tuner).
If that's the part number for a G29 generation Z4, yes it will fit.
Most likely a sensor will not fix your issue. The early model B58TU motors had plastic components in the oil pump that change the geometry of the pump. This plastic part has probably cracked, and oil level checks stop working...
