Coolant target is 95c at operating temp and 107c at warm up. Control (when the alarm bells sound) is 130c. So you are close at 120c.
Did you do the correct bleeding sequence for the high temp circuit? High temp circuit is with the engine running and low temp circuit is without the engine...
I'm still on OEM rear rotors after 60 days so I'm sure you are good there. Front is what gets the most abuse.

You measure in 3 points across the surface.
Really depends on the track. Personally, with the right pads and fluid, I have no issue with them at Lime Rock, Palmer and Poconos. Palmer and Poconos are the hardest on brakes out of the three.
Same caliper as 2020 but with the logos. I was joking about more stopping power, hence the wink.
