A lot of people have no issues like that on similar length courses and top speeds or even higher with no issues. Myself included. Advanced driver, seen 147 mph and hard braking lap after lap in 85F+ temps.
Depends on your elevation. You can also log that. Or just look up your closest weather station to ball park.
How big the boost spikes are between shifts are dependent on your tune.

Pre throttle is what you want, and you want to switch it to gauge pressure, not absolute, unless you like doing math all the time.
Absolute pressure - ambient pressure = gauge pressure.
Target is what the ECU is requesting, Actual is what it is... well, actually doing. Either way you want to be logging Actual for accurate boost, no matter if it's PSI absolute or PSI gauge.
Perfect example and probably closer to what the OP is seeing, the car is actually making 3.4 psi even...
That won't save you any money. You don't have to remove the intake manifold to install cams and you don't have to remove the valve cover to install an intake manifold.
