Your steering has more weight to it, the suspension firms up, and the throttle is far more sensitive, for starters. The more sensitive throttle response can also contribute to decreased MPG.
I remember seeing a post on instagram who had to downside to 295/35/19 because 305s were rubbing. You may run the risk of rubbing with 315s if you aren't using spacers or anything.
