It's more important to not thermally shock the load bearing surfaces at the beginning than anything else. Let things get to operating temperature before you have your fun.

Normal Mode greatly desensitizes the throttle response for smoother driving, as it's designed that way. The DME is also still in learning mode, so things will adapt and change a bit as you put more miles on. Don't worry about it.
I'm always sorry that so many of them seem to suck. I personally know four of them (two main, two back-up), and they're all intelligent, highly skilled technicians that actually like working on MKVs.
Lifespan depends on how hard you drive. Only thing I'll say, is that I could never be comfortable going 140+ mph on a tire that's been repaired, even if done properly.
Yes, the AVS programming and dampers themselves are different. The 23 is not only more comfortable, but doesn't get as upset by mid-corner bumps as the 21-22 did. The tendency to lift you out of the seat on large humps has also been reduced a bit more.
That's just how these things often cold start. Almost like a quick pop-off and stutter before everything else roars to life. Totally normal B58 behavior. I kinda like it, as it makes the engine seem a touch more beastly ;)
