Does holding both paddle shifters together put the car into neutral as long as you're holding? Or is that a fancy car quirk for Porsche's and Audi R8's etc...?

Nah ours don’t have that feature. However if you cruising and want to do a quick pull you can hold the downshift paddle and it’ll shift into the lowest gear for the pull.

I was thinking about this the other day and honestly it's a stupid feature or I don't see the use cases.

That's a feature for people that bought an exotic and definitely didn't buy a manual and they wanna tell people about it.
