Stock Wheel -- Tire Fitment Alternatives?

I recently got an extra set of stock wheels intended for track use. I really like the stock design (and weight), but it seems that not many tires are made at exactly stock spec. For your reference the stock specs are:
F: 19x9 255/35R19
R 19x10 275/35R19

I have always wanted to try out Goodyear Eagle Supercar 3, but they are only made in 255/40R19, 265/35R19, 285/35R19 sizes.
From TireRack descriptions it seems that 285/35R19 has reference rim size 19x10, so I assume this is okay.
But what about the front? Should I go 255/40 or 265/35? What are the pros and cons? I am on stock suspension BTW.

You cannot have different height of tire on the same wheel diameter. Thus if both front and rear wheels are 19", you should use 35 or 40 height for both front and rear tires, but not mix.

I would expect that 265/35 will fit. Stock tires are a bit narrower than they should be for wheels' width. Adding 10mm will likely correct that.

I had 265/35 (front) and 285/35 (Rear) tires on the OEM wheels.
It fits just fine, better in my opinion.

It gave the ride a bit more comfort since there was more tire cushion and overall grip was better on account of the greater contact patch.

These cars should have come in that spec.

Stock wheels and I just ordered 12/15mm spacers will I be able to go with 265/285 tires without any issues or will I now have to keep OEM tire size?
