Id check to make sure there wasnt an NDA for accepting the offer and if so make sure no one can track down which dealer this happened to.
I charge a fat fee for every NDA I sign, so I recommend you do the same, lol

Wait, doesn't the A91 already have CF mirror caps? Are they replacing with an A91 or a 2021 Supra Premium with CF mirror caps?

Join the club haha they buffed my 2020 Supra and puts swirls and scratches throughout. I fought them and Toyota corporate for 3 months till they gave me a 2021. I miss my red 2020 but I’m happy with the 2021 in tungsten :)

The last month has been a wild ride. Dropped off my A90 to the dealership for a Warranty Badge Replacement (It was cracked like others have posted) and it's 1 Year Service visit. The badge was replaced first, things went well. Next, the oil was changed, that went well, small amounts of oil were spilled on the engine due to the oil filter's location. Degreaser was used to remove the oil......

Here is where sh1t gets juicy. They claim a metal tool makes contact with a live wire that traverses the bottom of the car, and creates a spark. This spark then ignites the degreaser. This fire melts $3500 worth of wiring harnesses and kills the power steering.

After a month of waiting for parts to repair the car, they give up on the Rona affected supply chain and offer me an A91 as an even trade (with added CF mirror caps).

CRAZY I KNOW. I'm just here telling this story if it prevents anyone else from having a similar fate. They have been good about making things right all through the process but felt like I should bring the story here to share.
So what did they do wrong at the dealership? From your list it just sounds like they dropped a tool that arched and started the fire. I ask because 1. I have found most technicians at the dealership are NOT trained on the MKV 2. This sounds like a common mistake (e.g. dropp tools). Was this a common mistake or a 1 in a million mistake?

My 2020 is a tungsten gray. I do love that red though. I'm getting concerned because since I have modded the car heavily I am probably NOT going to take it to the dealership to maintain, but instead take it to the tuner. However now I'm thinking I need to micro manage the shit out of them to make sure they don't ruin something

I had a 2020 Yellow Premium + Driver Assist. I am getting a 2021 Premium + Driver Assist + CF Mirror Caps (the $999 factory add on).

Damn. Did you lose any mods on the car?

I wouldn't be too upset with an A91 replacement, but I've already spent quite a bit of money on my A90 so I'd be bummed if I lost those aftermarket parts
I only had plans to do a spoiler and intake but never got around to it.

got it...so you are a getting a 2021 A90....not the A91, which is the special edition version.

But after hearing that the A91 is coming with no HUD, it's probably better that you got the Premium

Correct. I posted further up I had my editions mixed up. But yeah, A90 2021. Also that is tragic about the HUD, I would not sacrifice the HUD for a limited edition.
