for me, 5w30 300v has maintained higher viscosity than 5100 gen2 5w40 or LM 5w40. All of them were run for the usual 2-3 track weekends and then sent to blackstone.

I got low fuel warnings there (when I wasn’t low fuel)
so it’s for sure possible. :) The low fuel warnings still pop up with a surge tank. Presumably the sensor in the fuel cell doesn’t see the fuel but there is enough in the surge tank to keep you going until the LPFP can start pumping fuel again.
General consensus seems to be that it's laggy and doesn't make as much power as you'd expect.
