This is honestly probably a very dumb question, but when installing a non-valves exhaust are there any precautions to do with unplugging the valve control to not get a cel?

Just zip tie it out of the way. It won’t cause a CEL, only a shadow code you won’t see.

You can buy a code canceler from BMW if you don't want any codes in the background but it won't cause a CEL or anything like that.

@SupraBH yeah but it doesn’t throw a code on the dash
So seems like the only way to have the car avoid drawing codes even in the background is the simulator plug then. I know it won’t throw any lights but I’d rather avoid the car throwing codes whenever possible.

Personally
 having exhaust always loud can get old. I put on the AFE exhaust and it’s the perfect blend of loud when I want it as it is basically a straight pipe and quiet when i close the valve and just not in the mood for it or when trying to have a conversation with the Mrs.
