I’m 6’3 with a long torso and find myself barely fitting in the ‘23 MT Supra in terms of head room. Leg room is fine, but when I sit up straight in the car with my head on the headrest, I graze the roof liner. With that being said, I’m fine in my normal, slightly forward driving position (without having my head on the headrest).

I’m looking to squeeze just a little extra head room out of the car in order to make it more comfortable and safe. Does anyone have any tips for how to adjust the seat to maximize headroom, or maybe even some aftermarket options for the seat mounts? Does removing the aluminum bar behind the seat make any difference in terms of maybe leaning the seat back a bit more?

Appreciate any help!

Removing def gives you more room. Many tall ppl have already done it.
There are aftermarket options. Bride Japan seats and rails and whatnot..
For both, several threads available. Can't look for them now. But use search. Seat rail, aftermarket seat... Tall people problems.

This might be completely unrelated but the seat in one of the cars I test drove seemed to not lower as much as others. Maybe check under the seat for obstructions or try reset the seat mechanism?

Or be shorter. ?

My recommendation, and option I would have taken before bolting buckets straight to the floor, is the remove the headliner, and just cover the stock roof with headliner fabric. That gets you at least another inch.
