Is anyone else worried about the used market on the MKV?

I'd be more worried about the dealers doing this than 'enthusiasts'

I see people on this forum already putting in wrong spec oils so the market as a whole I’m concerned as well. Buying used you don’t know how the car was maintained unless it was a lease, and even then it’s the dealer not screwing up

Not sure a lease means it is maintained correctly as it is not required to be serviced by the dealer.... and realistically maintenance may be required of a lease but that doesn't mean people do it. I think your best bet for service history is carfax or a similar service that shows the car being serviced - but that isn't going to show the oil type used.
