Check the battery with a voltmeter. CR2032 should be above 3.2V when new.
Also check if the metal springs on the key fob is actually in contact with the battery. You might have to bend them out a little.

+1 for checking the battery voltage or just buy a new one.
I had similar issues where my key wouldn't even unlock the car after changing to a new battery.
I measured the new battery, and it wasn't even out of spec. Turns out that with a little load, the voltage immediately crashed down, causing the key not to work. (Battery may have gone bad because of age, who knows)
Bought another battery and it has been working ever since.

Happy New Years everyone, and thank you for the suggestions. I bought a new 2032 and volt tested it but still nothing. This problem is annoying since you’re locked out from BT/apple carplay connection and keyless entry. I might have to get the key reprogrammed if disconnecting the car battery doesn’t work. Reprogramming the fob is not ideal since I rather not have the dealership flash my ecu back.

One of my key fob batteries just died, (after 2 years) so I replaced both fob batteries - no problems. In your case, the fob itself is suspect.
Another thought: Is there a keyless entry system fuse?

I’d say since u have verified the fob battery is good, it’s gonna be the fob or possibly something with the car. How is the charge on the vehicle battery

I’d have to check that out, do you know what fuse it is? My keyless entry doesn’t work at all also.

Haven’t checked the voltage of the car battery yet, but I suspect it needs to be changed soon.

I've never had to check mine, but based upon some research, you should check fuses:
F4 (MINI 5A)
F5/F6 (MINI 20A)
in the interior fuse box (passenger side) The diagram may be on/in the fuse box cover.

What a fucking nightmare. How do cars get sold without a second key? Hope you get it sorted.

Thank you for all the suggestions, greatly appreciated!
I talked to a mechanic and they suggest something acted up with the key fob communication to car security so I would need a locksmith to resync the two(?)

If you need a locksmith, I have heard they have the ability to program a new key, I would have them make a 2nd one when fixing the first one. Way cheaper than dealership, and quicker also.
