I have some rays gramlights that are .5 inches wider than stock, more more aggressive offset. Essentially gained some track with there right?
As noted, it changes the track width. It's the ratio of front to rear track width that matters. As you add width to one end or the other it effectively gains grip. The result is eventually a perceived lack of grip at the other end. Like I mentioned, it's likely not coming into play here and toe is the one to focus on, along with other minor things like tire pressure, tire age, etc. It's a fun one to think through though, and something not often used in tuning.

Yeah I dropped my pressures further yesterday and that helped a bit but she still tried to kill me lol.

You basically have no toe-in in the rear so that is why it wants to kill you. On power, the oem bushings will basically flex enough to toe out the rear and you get drifito machine dynamics.

I run about 2.5mm toe-in in the rear. Not sure what that translates to degrees. I do my own alignments and use a mm ruler.

Even with that setting, I get even tire wear and I drive to/from events and on the street, but not a daily.
Total toe in, or 2.5 mm each side?

In addition to minimal front camber, he's running stiff sway bars and upsized rear tires. I can only imagine that he is probably plowing through corners, aggressively braking to get the front to grip, then aggressive on the throttle getting the rear to sort of grip before snapping when he lifts.

In addition to the alignment, you mentioned that you have your rear sway is on middle stiffness. You may want to consider softening up the rear bar to gain a little more rear compliance.
