I have a ‘23 3.0 Premium, stock. Just about 3 months old and coming up on 1000 miles. Should I be aware of any suggested services, oil / fluid changes or just wait for the 1 year service?

At the current rate, you'll have less than 5000 miles after one year. (same with my Supra) I will (and recommend you, also) have the change done every year. Most likely, I'll be doing it, myself after the warranty expires.

I'm doing every 8k-10k km, first oil change was at 13k km. I don't track, I use it as a daily. Oil looked normal at 13k km -- Toyota says once a year every 15k km.

Just drain the oil and fill it with canola oil. That's what I do with mine?

I don't see how anybody that knows anything about cars would let a turbo car run more than 3k miles with the same oil? unless they drive like they are 80.
